Lots of Omega 3 in Sidway 415

Salmon...again...my favorite. This salmon was baked at 370 for 20 minutes with a slices of garlic placed on top of each fillet. I also made sesame noodles and a salad. Delish!

Back!

My triumphant return to Buffalo after a long summer of recovery from foot surgery has inspired me to cook, cook, cook. Last night I made salmon in the oven with garlic, spicy sesame noodles and blanched green bans sauteed in soy sauce. The meal was delicious and I have to say that this is one of my favorite QCC photos, thanks to ADG.

A Tale of Two Salmons


Two different dinners featuring salmon:

The first one was just a standard salmon fillet but I made homemade french fries that were AWESOME. I seasoned two idaho potatoes with kosher salt, pepper and chilli powder and then baked the fries in the oven--the catch though was that I used Olive Oil PAM to the baking sheet and then PAM'ed the fries as well, these fries are clearly a lot better for you because they are baked not fried and there is really no fatty oil being used, because the PAM does the trick. Delicious dinner.

For the second salmon dinner, I made pesto in the food processor (fresh basil, pine nuts, garlic cloves, salt, EVOO) and then spread the pesto on the salmon and baked in the oven for 20 minutes at 370. The salmon was so good with the pesto it just melted in your mouth. I also made a spinach salad with feta, hard boiled egg, cherry tomatoes, mushroom, red onion and a tiny bit of olive oil. YUM!!

Ratatouille!

With our powers combined, Ari and I make some delicious meals. For Shabbat this week, Ari and I made Ratatouille. We cut up two eggplants, three zucchinis, one squash, a red pepper, a yellow pepper, peeled Roma tomatoes and basil. We mixed all the veggies together in a dish and then baked with a cover for an hour at 350. We also prepared a salmon fillet, and then served the Ratatouille over egg noodles.

Last week I made dinner for myself and I did it up: Salmon (so predictable), roasted asparagus (15 minutes at 350 degrees, with a little bit of EVOO, kosher salt, pepper, and lemon juice) and homemade cauliflower and garlic mash (steamed 8 cups of cauliflower and 4 garlic cloves, and then mixed in a food processor with 1/3 cup non fat buttermilk, salt, pepper, 1 tsp margarine, and 1 tsp EVOO). Low carb substitute for mashed potatoes and oh so yummy. No witnesses to attest to the deliciousness that was this meal, but I think the picture speaks for itself.

Salmon & Steak Frites

Last night I prepared a delicious salad, along with a salmon fillet for myself and a rib eye steak for the boys, accompanied with frites (frozen curly fries). A great meal! Ari taught me prepare and cook the salmon in a new way, and it was delicious: first I covered the fillet in a little bit of EVOO, then I squeezed lemon juice all over, and finished it off with some kosher salt and pepper. The salmon was cooked for 20 minutes in a glass dish at 375 degrees, and it was absolutely amazing. For the rib eye, just a little bit of kosher salt, and flash fried for about 6 minutes on high heat. A yummy Saturday night in the Sidway.

Dinner at Chez Cohen's

I can't even begin to describe how amazing this meal was that Ari had us over for--he made steak for everyone but salmon for me because he knows I'm not a big red meat fan (he's good to me). As you can see in the picture, sort of, he made the salmon with his amazing homemade chimichurri sauce...so good, can't get over it. Also featured is a delicious salad with balsamic, tomatoes and mozzarella, and sesame noodles (my addition to meal). Sad to say I neglected to take a picture of the enormous steak, which everyone was raving about, clearly.

QCC is alive!

QCC has been lagging, I know. Student teaching has me going nuts. Nevertheless, here is dinner from the other night. Salmon fillets, a delicious salad and potatoes au gratin (made from the box). Stay warm!

salmon dinner revisited

I prepared a salmon fillet and a mozzarella, tomato, basil salad for dinner tonight. I used the last of the basil from my basil plant that I have been trying to grow in the apartment, unless of course I can save the plant and it starts to grow again.

This meal was delicious. I heart salmon...and mozzarella tomato basil :)

Shabbat with Dalia!

Tonight I made salmon, green beans (of course) and homemade pesto. I also picked up a whole wheat challah at Wegman's. Awesome Shabbat dinner--

This meal has appeared here before. What can I say? We love our salmon and homemade pesto. I emailed Hannah Klausner the directions to make the salmon the next day, hopefully she and hola jewey enjoyed it as much as we do.

LKK is here visiting so I cooked her up a baller meal: salmon fillets, GBs (green beans),greek salad and waffle fries (frozen Alexa brand...fantastic). Ari joined us too--way fun. If any blog readers come to visit, I'll hook it up like this. Come to the bflo!

little dinner party

So this post is after a long hiatus from the blog (sorry to all my loyal readers haha). Tonight, our friends Ari and Yelena came to dinner. I made salmon, homemade pesto pasta, green beans in soy sauce, and a greek salad. It was delicious! The picture is a little blurry but really everyone enjoyed all the food. Tonight I am going to try a new recipe--stay tuned!!

second night in buffalo

So after about an hour in Wegman's and a roughly 50+ item grocery shopping list, we finally got back to the apartment and I began my first cooking adventure in my new kitchen. First I blanched green beans and put them in the fridge to dry. I got started on a recipe for garlicky oven baked fries. I thought it was only going to be 15 mins of prep for the potatoes, but it ended up taking a little over a half hour. So needless to say that dinner got started a bit later than we had wanted. I put the potatoes in the oven to bake for 30 minutes and prepared 2 salmon fillets with EVOO and s&p. Stuck the salmon in the fridge, hopped in the shower while my fantastic roommate prepared a delicious salad and looked after the potatoes. Post shower I cooked up the salmon: first over the stove and finished off in the oven. Completed the meal by sauteing up the green beans with soy sauce. The roomie set the table and did the dishes = lucky me (thanks adg).
